Sustainability has always been one of our core principles, aiming to minimize waste and reduce environmental impact at every stage of the process.
That’s why we continue to offer our wines in selected locations across the island, promoting a responsible consumption model that respects the environment.
Our history
First generation
Don Jaime Ripoll de “Cas Torrer”, my grandfather, was the founder of the wine cellar. He started making wine in a cellar in the street “Ses Roques” in Binissalem, which is still practically intact.
After several harvests making wine in this cellar, he decided to buy another cellar which is nowadays catalogued as historical and artistic heritage. Today we continue to make our wine “Ses Roques” in this cellar.
All the wine was sold in bulk until the harvest was finished.
Second generation
Pau Ripoll, my father, continued to produce Mallorcan wine in Binissalem and other villages, such as Porreres and Cas Conco.
With the arrival of tourism in the early 60s, he took advantage of this fact and started importing wine from the mainland to Mallorca, as the demand and consumption were so great that the Balearic production was not enough.
They blended 50% Mallorcan wine with wine from the mainland.
This coupage was very popular as the quality and taste of the wine improved considerably.
In a single season, 4.5 million litres of wine were sold.
Third generation
I, Jaime Ripoll, am still selling wine in bulk, although I have always wanted to return to the origin of this company and make Mallorcan wine.
For this reason, in 2016 I started this personal project by planting a new vineyard in Binissalem.
“Ses Roques” is the new brand of Mallorcan local wine that I made for the first time in 2019 with grapes from this vineyard.

Vineyards
The vineyards are distributed in different plots totalling 6 hectares, and they are worked manually and organically with the minimum phytosanitary intervention, thus preserving the biodiversity and the structure of the land.
Each stage of the growth and development of the grape is monitored, mainly in the most delicate moments of spring, without skipping any field work and doing a good winter pruning: “ULL MIRA TALL” (traditional method that respects the conduction of the sap of the plant), another pruning in green, eliminating the unwanted shoots and doing the stripping and defoliation of the plant, at cluster level, to have a good ventilation and to improve the plant health.
All this is done with the utmost respect for the land and the environment.

Our coupage
Every year we go to the peninsula twice. The first time before the harvest and the second time after.
Before the harvest we go to see the vineyards and tell our winemakers and suppliers how we want them to make our wine, thus achieving a totally personalised wine.
The grapes are harvested by hand in 12kg boxes. In the field we select each of the bunches, thus ensuring that only the bunches that are in perfect condition enter the winery.
The wines we make are not coupages but single varietal wines such as tempranillo, garnacha, sirá, merlot, sauvignon blanc, macabeo, airén.
We look for wines that are smooth on the palate, with balanced acidity, medium-high colour intensity and alcohol content between 13 and 14 degrees for reds and rosés and between 12 and 13 degrees for whites.
Once the winemaking process is finished, we return to the peninsula to taste the different vats just after the malolactic fermentation. We choose the vats we like the most, as there are differences in the same variety and the grapes come from different plots or from different winegrowers. The choice of the vats we acquire is the key.
Then there is the importance of making the coupages. We make them in our facilities with the single-varietal wines. We adjust the percentages as they can vary from one year to another.
